An Unexpected Salad

When it comes to salads, why not think out the box and get creative. If you’re bored of bowls of lettuce and tomatoes and need something simple and easy, and most importantly, full of flavour, then this is the ultimate salad for you.

The watermelon, feta, and mint salad requires 5 primary ingredients, one of which is for the dressing, and provides a delightful melody of complex flavours. This is the salad that will make the biggest veggie-hater give salads a second chance. Try this salad out for your next dinner, luncheon or braai.

So here is our recipe of the week: the watermelon, feta, and mint salad.

 
Ingredients:
½ ripe watermelon cubed into bite-size pieces
1 ½ cups of crumbled feta cheese
½ cup of finely chopped mint leaves
½ cup of pumpkin and or sunflower seeds
Balsamic vinegar to taste

 
Method:
1. Cut and de-seed the watermelon into bite-size chunks and place into your salad bowl.
2. Gently stir in chopped mint leaves and crumbled feta.
3. Sprinkle seeds on top.

 
Always remember to experiment with your recipes to find what flavours work best for you and your family. Half of the fun is tweaking a recipe here and there and coming up with something uniquely yours. At the end of the day, it the people you spend time with that makes a meal great.
